Pohjala Brewery Pime Öö PX | (Pedro Ximenez) Barrel Aged Imperial Stout

Pime Öö PX is an exceptional Imperial Stout brewed for the darkest night of the year and aged in Pedro Ximénez sherry casks. Upon opening, the room fills with sweet raisin and dark fruit aromas, supported by rich chocolate and a touch of roasted oak. In the glass, it presents a nearly opaque dark brown colour with a thick golden-brown head that clings beautifully to the sides.

The flavour is deep, layered and intensely satisfying. The first sip brings chocolate accented by a subtle smokiness from the barrel. The mid-palate balances gracefully between chocolate liqueur and the sweetness of PX sherry, gradually evolving into a long, drying finish. Sweetness gives way to elegance, while the full body and warming alcohol provide remarkable depth. This is a stout built to enjoy now or to let mature, gaining even more complexity over the years.
